Hot Dog Cups

Servings: 8

INGREDIENTS

8 hot dogs
⅓ cup ketchup
1 tablespoon yellow mustard
1 teaspoon Worcestershire sauce
8 refrigerated biscuits
1 cup shredded cheddar cheese

PREPARATION

1. Preheat oven to 350°F/180°C.
2. Cut hot dogs lengthwise and chop into small pieces. Mix with ketchup, mustard, and Worcestershire sauce.
3. Press each biscuit into the cups of a greased muffin tin. Fill with hot dog mixture.
4. Bake for 10 minutes. Remove from oven and top with shredded cheddar cheese.
5. Bake for an additional 5 minutes.
6. Enjoy!

Chocolate Cream Cheese Croissant Bake

Servings: 10-12

INGREDIENTS

2 (10 to 13 ounce) package mini croissants, chopped
2 (8 ounce) packages cream cheese, softened
1 cup brown sugar
2 egg
1 teaspoon vanilla
1 ½ cup milk
2 cups semisweet chocolate chips

PREPARATION

1. Preheat oven to 450ºF/230ºC.
2. Open 2 (or 3, depending on the size of your baking pan) prepackaged crescent dinner rolls and chop them into 2 cm balls.
3. Spray a medium-large baking pan with cooking spray and place the balls in the pan.
4. Sprinkle chocolate chips evenly over the dough.
4. In a large bowl, whisk cream cheese until smooth and creamy, add sugar, eggs, and vanilla, and whisk together until mixed. Slowly add milk to develop a more liquid consistency without curdling the cream cheese.
5. Pour cream cheese mixture evenly over dough then let sit for 20 minutes (optional)
6. Bake for 45-50 minutes, or until middle is cooked through.
7. Cool for 10 minutes.
8. Garnish with a nice scoop of vanilla ice cream, and enjoy!

Berry Vodka Sunrise

Yield: 10 servings

INGREDIENTS

3 cups vodka
3 cups orange juice 
3 cups sparkling water 
1 ½ cups mixed berries
1 ½ cups tart cherry juice
1 ½ cups maraschino cherry liquid (¼ cup grenadine will work as a substitute)
Fresh orange slices and maraschino cherries to garnish

PREPARATION

1. Combine vodka, orange juice, and sparkling water in a pitcher.
2. Stir in the fresh oranges and set aside. 
3. Puree mixed berries, tart cherry juice, and maraschino cherry liquid in a blender or food processor.
4. Strain the purée through a sieve into a separate pitcher. 
5. When ready to serve, pour orange vodka mixture into a glass of ice, leaving some room. 
6. Top off the drink with the berry liquid and watch it settle to the bottom. 
7. Garnish with an orange and maraschino cherry.

One-Pan Garlic Parmesan Chicken And Vegetables

One-Pan Garlic Parmesan Chicken And Vegetables

Serves 2

INGREDIENTS

2 chicken breasts
2 small broccoli crowns
4 medium red potatoes
¼ cup olive oil
2 teaspoons sea salt (or kosher salt)
2 teaspoons black pepper
2 teaspoons onion powder
1 teaspoon paprika
2 cloves garlic, crushed
⅓ cup parmesan cheese, shredded or grated

PREPARATION

1. Preheat oven to 400˚F/200˚C.
2. Cut broccoli and potatoes into small pieces and place on either side of a sheet tray. 
3. Place two whole chicken breasts in the middle of the sheet tray. 
4. Drizzle the vegetables and chicken with olive oil (all but 1 tablespoon). 
5. In a small bowl, blend the salt, pepper, onion powder, and paprika. 
6. Evenly sprinkle the spice mixture over the veggies and both sides of the chicken. (TIP! Save any excess spice mix for next time.)
7. Lightly mix the veggies on the pan with your hands to coat with the spices.
8. Rub the top of the chicken breast with crushed garlic, then sprinkle the parmesan cheese evenly over the chicken and vegetables. 
9. Bake for 20-25 minutes, or until the chicken’s internal temperature reaches 165ºF/75ºC.
10. Enjoy!


    Antioxidant Berry Crisp



    An Original Recipe by Not Quite Nigella
    • 1 tablespoon butter
    • 1 tablespoon plain all purpose flour
    • 1 tablespoon shredded or desiccated coconut
    • 1 cup of your favourite toasted granola
    • 3 tablespoons brown sugar
    • 4 cups berries (fresh or frozen is fine)
    • 1 tablespoon cornstarch
    • Natural yogurt to serve
    Step 1 - Melt the butter in a frying pan on medium heat and once the butter has melted, add the flour and coconut and stir until toasted. Add 1 tablespoon of the sugar and the granola to the pan and toast a little further. Set aside in a bowl.

    Step 2 - In the same pan, place the berries and the remaining 2 tablespoons of brown sugar and saute until the berries are cooked but not mushy or indistinct in shape. They cook very quickly so a few minutes is all you need (it also helps to preserve their goodness if you don't cook them for too long). Remove from the heat and add the cornstarch and stir until the liquid has thickened. Taste the berries and add more sugar if needed (some berries are more tart than others).
    Step 3 - Sprinkle the toasted granola on top and serve with natural yogurt.
